Apricot Bliss Balls
We all know how hard it is to find a quick, easy and healthy snack at around 3pm that satisfies those cravings and fills you up. These Apricot Bliss Balls are a great answer to this problem. I know they help me out and the best thing they take under 30 minutes to make. I tend to double the recipe so I have enough to go around and always have some on hand for a quick bite.
1 cup of dried apricots
1/2 cup of almond meal
1/4 cup of chia seeds
2 tablespoons of honey
1 cup of desiccated coconut (for coating the balls in)
Place apricots, almond meal, chia seeds and honey in a food processor
Mix together until combined
Take about a tablespoon of mixture out and roll into a ball
Place the ball into the coconut and roll around
Put the apricot balls into the fridge overnight
Wet your hands with water before rolling balls to keep from sticking
Makes about 20
Can be frozen for up to a month.
